Preparation:
*you may replace eggs with 1/4 cup water and 1 egg; or omit eggs and use 1/2 cup water
Beat eggs and sugar until very light. Add baking powder and spices. Add Flour. Knead until thoroughly mixed. chill the dough overnight. shape into small balls (smaller than a marble). Preheat oven to 300 degrees. Bake on greased cookie sheets (or on baking parchment) until very lightly browned. (15-20 minutes). Shut off oven, leaving cookies in oven until completely cooled. PFEFFERNUSSE ARE MEANT TO BE VERY CRUNCHY.
