Kids Favorite Oatmeal Brown Sugar Cookies

Serves: 3 1/2 dozen cookies
 

Ingredients:

1 1/2 Cups firmly packed brown sugar
1 cup butter -- softened
1 large egg
2 Teaspoons grated lemon peel
2 Cups quick cooling oats or old-fashioned rolled oats
1 1/2 Cups all-purpose flour
1 Teaspoon baking powder
1/2 Teaspoon salt
---Stir-ins Ingredients: (one of the following:)
1 cup raisins
1 cup cut-up gumdrops
1 cup green or red chocolate coated candies
1 cup chocolate-covered raisins
1 cup chopped nuts
1 cup chocolate -- butterscotch or
1 cup vanilla chips
1 cup toffee chips
1 cup cut-up candy bars -- etc.
 

Preparation:

Heat oven to 375°. In large mixer bowl combine brown sugar, butter, egg and lemon peel. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Reduce speed to low; add all remaining ingredients except stir-ins. Beat until well mixed (1 to 2 minutes). By hand, stir in desired stir-in from above. Drop by tablespoonfuls onto ungreased cookie sheets. Bake for 10 to 14 minutes or until lightly golden brown on edges. Cool 1 minute before removing from cookie sheet. Cool completely.
