Butter Pecan Cookies

Ingredients:

1/4 pound butte -- , room temperature
1 cup packed light brown sugar
1 large egg
2 tablespoons balsamic vinegar
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup pecan halves -- coarsely chopped
 

Preparation:

Preheat oven to 375 degrees. Grease or coat two baking sheets with nonstick cooking spray. In a mixing bowl with electric mixer or food processor with metal blade, mix butter and brown sugar until creamy. Add egg and vinegar and mix until well blended. Add flour, soda and salt and mix on low speed or pulse until blended. Mix in pecans. Drop by tablespoons 2-inches apart onto prepared baking sheets. Bake for 8 minutes. They will be soft but will firm up as they cool. Immediately remove cookies with a spatula to racks to cool. (Cookies may be stored in an airtight container for several days or frozen.)
