Shrimp In Red Garlic Sauce

Ingredients:

---Sauce:
3/4 Cup spicy vegetable juice
1 Tablespoon cornstarch
1 Tablespoon sugar
1 Tablespoon rice wine vinegar
1/8 Teaspoon crushed red pepper flakes (optional)
1 Stalk celery -- chopped (1/2 cup)
2 Teaspoons vegetable oil
2 Cloves garlic
1 Package frozen cooked medium shrimp -- (12 ounces) defrosted and drained
1/4 Cup diagonally sliced green onions
2 Cups hot cooked white rice
 

Preparation:

1. Combine sauce ingredients in 1-cup measure. Set aside. In 2-quart saucepan, combine celery, oil, and garlic. Cook over medium heat for 3-1/2 to 5 minutes, or until celery is tender-crisp, stirring occasionally. 2. Add sauce mixture. Cook for 1-1/2 to 2 minutes, or until sauce thickens and bubbles, stirring constantly. 3. Add shrimp and onions. Cook for additional 1-1/2 to 3 minutes, or until shrimp is hot, stirring frequently. Serve over rice. 4 servings
