Shrimp Con Queso 2

Ingredients:

3 pounds shrimp
1 stick margarine
1 cup chopped celery
1 cup chopped green onions -- (include tops)
1 cup diced bell pepper
1/2 can tomatoes and green chiles -- (1/2 to 1)
1 package velveeta cheese -- (16 oz.)
1 can cream of celery soup
1 can cream of mushroom soup
1 can milk
 

Preparation:

Boil shrimp in salted water (or shrimp boil); set aside and peel when cool. Saute celery, onions and bell pepper in margarine. Add remaining ingredients and cook over low heat until cheese is melted and all ingredients blended. Add shrimp 5 minutes before serving. Serve as a dip or as a main dish over rice. Makes 8 main dish servings. This freezes well if you want to make ahead of time or have leftovers.
