Broiled Shrimp With Garlic Butter

Ingredients:

2 pound shrimp in shell
1/4 pound butter
1/2 Cup olive oil
1 Tablespoon lemon juice
1/4 Cup chopped scallions
1 Tablespoon garlic
1 teaspoon Ground black pepper
4 Tablespoons chopped parsley
 

Preparation:

Shell the uncooked shrimp but don't remove the tails. Split them down the back and remove the intestinal veins. Wash under cold water and dry. Preheat broiler to the highest temperature. In a pan melt the butter, then add the oil, lemon juice, scallions, garlic and papper. Add shrimp and broil 3-4 inches from the heat for 5 minutes. Then turn, broil 5 minutes on the other side. Serve on a platter with parsley and strained juices from pa
