Serves: 6

Ingredients:

18 slices bacon -- cut in half
1 teaspoon salt and pepper
1 medium red onion -- sliced
1 tablespoon chopped fresh parsley
1/4 teaspoon garlic powder
1 teaspoon snipped fresh oregano
1 clove garlic -- mashed
3 tablespoons canola oil
3 tablespoons red wine vinegar
2 pounds jumbo shrimp -- peeled and deveined

Preparation:

1. In a large bowl, combine all of the ingredients except the bacon. Cover and chill for 8 to 12 hours. Remove the shrimp and set aside. Pour the liquid into a small saucepan. 2. Over medium-low heat, cook the liquid until reduced to about 1 cup. 3. Position the broiler rack 6 inches from the heat and preheat the broiler. Lightly grease a broiler tray. 4. Wrap each shrimp with 1/2 a strip of bacon and lay on the tray, seasoning each with salt and pepper before rolling up. Broil for 3 to 4 minutes or until the bacon is crisp. To serve: Place the liquid in a dipping cup in the center of a plate or tray, arrange a bed of lettuce leaves on the tray and place the shrimp on the leaves with toothpicks on the side.
