Mango Salsa 7

Ingredients:

1 medium ripe mango -- (abt. 1 lb.)
1 small red bell pepper -- seed and julienned
1 tablespoon fresh ginger root -- peeled and minced
1 medium red chili pepper -- seeded and fine chop
1/2 cup red onion -- thinly sliced
2 tablespoons fresh cilantro -- chopped
5 tablespoons fresh lime juice
1/4 cup fresh orange or pineapple juice
1 teaspoon salt and pepper -- to taste
 

Preparation:

Peel mango and cut into 1/4" dice. Combine all ingredients in a bowl. Let stand at room temperature for 30 minutes before serving. Makes about 3 cups.
