Corn Salsa Cups

Ingredients:

10 medium plum tomato
1 cup sweet red onion
1 cup red bell pepper
1/4 cup jalapeno chile
1/4 cup cilantro
1/2 cup fresh lemon juice
1/2 cup tomato puree
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
3 cups whole kernel corn
60 pieces croustade
 

Preparation:

Combine tomatoes, onions, bell peppers, chiles, and cilantro-toss to mix well combine lemon juice and tomato puree-mix well pour over tomato mixture season with salt and pepper add corn-toss to mix well spoon into croustades serve at once
