Turkey Waldorf Salad With Creamy Citrus Dressing

Ingredients:

1/2 cup plain nonfat yogurt
1/4 cup regular -- low-fat, or nonfat mayonnaise
2 teaspoons grated orange peel
2 tablespoons orange juice
1 tablespoon lemon juice
3/4 pound cooked deli turkey -- cut into 1-inch
2 cups seedless grapes -- (red and green),
2 large apples -- cored, cut into
2 medium celery stalks -- thinly sliced
1 cup toasted walnut pieces
1/2 cup raisins
2 bunches butter lettuce leaves
 

Preparation:

Whisk yogurt and mayonnaise in medium bowl to blend. Add orange peel, orange and lemon juices and whisk until well blended. Season lightly with salt and pepper. Combine turkey, grapes, celery, walnuts and raisins in large bowl. Add dressing and toss to coat. Serve salad on bed of butter lettuce leaves. Prep Time: 20 minutes Makes: 4 servings Traditionally, waldorf salad is a mixture of apples, grapes, raisins and nuts in a creamy dressing. Here with the addition of chunks of turkey, the salad becomes a main course.
