Chive Dressing

Ingredients:

10 1/4 Ounces soft tofu -- drained
3 Tablespoons Dijon mustard
1 Tablespoon fresh lemon juice
1 clove garlic
1 Bunch fresh chives -- minced
 

Preparation:

Puree first 4 ingredients in blender or processor until smooth. Season to taste with salt and pepper. Transfer mixture to small bowl. Stir in chives.(Can be prepared 4 days ahead. Cover and chill.) 1 1/2 cups. Use this versatile sauce as a dip for crudités, a dressing for cold fish or chicken, and as a substitute for mayonnaise. Tofu makes it virtually fat-free.
