Butter Lettuce, Watercress and Parsley with Lemon Vinaigrette

Ingredients:

9 tablespoons olive oil
3 tablespoons lemon juice -- fresh
1 teaspoon salt
1/4 teaspoon pepper
1 large shallot -- coarsely chopped
1 1/2 cups parsley -- flat type, chopped
1 large watercress bunch
2 small butter lettuce -- torn
 

Preparation:

In the bottom of a salad bowl, combine the olive oil, lemon juice, salt, pepper, and shallot, mixing well with a whisk or a fork. Add the parsley, watercress, and butter lettuce and turn gently until everything is well coated with dressing. Serve immediately
