Parkersburg Peach Ice Cream

Ingredients:

2 cups ripe peaches -- crushed
1 1/3 cups sugar
1 teaspoon almond extract
1/8 teaspoon salt
2 tablespoons flour
2 large eggs -- slightly beaten
1 1/2 cups milk
2 teaspoons vanilla extract
2 cups heavy cream -- or half and half
 

Preparation:

Mix the peaches with 1/3 cup of the sugar and the almond extract. Mix the remaining sugar, salt and flour in a pan. Blend in the eggs and 1/4 c of the milk. Add the remaining milk and cook over low heat until the mixture coats a metal spoon, stirring constantly. Remove from the heat and cool. Add the vanilla and the cream. Stir in peaches.
