Beef Curry Using Coconut Milk

Ingredients:

1 1/2 pound stew beef -- cut in 1 inch cubes
1 medium onion -- peeled and diced
3 cloves garlic -- peeled and minced
1 bunch green onions -- chopped
1 teaspoon fresh ginger -- peeled and minced
1 teaspoon fresh chilies. minced
2 teaspoon curry powder
 

Preparation:

2 or more cups coconut milk (enough to cover meat) 2 Tablespoon cornstarch 1. Brown Beef in light oil over moderately high heat. Set aside. 2. In same pan sauté onion, garlic, ginger, and chilies until soft. Add beef and curry powder. 3. Add coconut milk, cover and simmer over low heat until meat is tender - stir regularly. 4. Dissolve 2 Tablespoons cornstarch in 3 Tablespoon water. While meat is still simmering, slowly add cornstarch mixture, stirring constantly. This will thicken the stew. Serve with white rice and a fresh salad or fruit. Try cooking your rice using 1/2 coconut milk and 1/2 water. It's delicious! note: coconut milk adds a subtle delicacy to most dishes it is used
