Quick Baked Fish

Ingredients:

3 tablespoons butter or margarine
1 fillet fish fillet per person
3 tablespoons flour
1/4 cup minced onion
1/4 teaspoon salt/pepper to taste
1/4 cup butter -- melted
2 tablespoons lemon juice
1/2 cup white wine
1 bunch chopped parsley
1 medium lemon wedges
 

Preparation:

Use sole, red snapper or flounder fillets. Preheat oven to 450 degrees. Line a shallow baking pan with foil and place pan in hot oven. When hot, brush pan well with butter. Arrange fish in pan. Dot each piece with butter. Sprinkle lightly with flour, onion, salt and pepper. Combine 1/4 c. melted butter, lemon juice and wine. Bake fish in hot oven about 10 to 15 minutes, basting frequently. Serve remaining sauce over white rice.
