Married Women Fish

Ingredients:

1 teaspoon salt and pepper
4 fillets fairly large or 8 small jacks
1/2 Pint fish stock -- (US 1 1/4 cups)
2 tablespoons lime juice
1 ounces flour
2 1/2 ounces butter
1 teaspoon finely chopped parsley
1 teaspoon finely chopped cives
 

Preparation:

Sift some salt and pepper together. Slash both sides of each fish three times and rub salt and pepper mixture into cuts. Grease a baking tin with butter, lay fish on it and pour over stock mixed with lime juice. Knead flour with 1 oz. butter and dot resulting paste on fish. Cover with buttered greaseproof paper and bake in a hot oven for 20 min. basting with melted butter. Put cooked fish on a dish and keep hot. Pour liquid from baking tin into a pan, add remaining butter, parsley and chives. Season with salt and pepper to taste and cook, stirring until sauce is reduced to two-thirds. Pour over fish and serve with slices of lime. (Baked Jack) Note: Jacks vary in size from very small, not much bigger than sprats, to fish about the size of herring. In Grenada they are sometimes called 'Married Women', no one knows how they got this name. Prep time: 10 - 12 min. Cooking time: 20-25 min. Oven temp: 425 dregrees F To serv
