Preparation:
Brush a 1 1/2 quart micro-safe dish with olive oil. Arrange fish with thickest portion to the outer edge. Sprinkle lemon pepper. Place margarine in 2 cup glass measuring cup. Microwave on High until melted (1 minute). Stir in lemon juice, vinegar and parsley; pour over fish. In separate bowl, combine cracker crumbs and paprika; sprinkle over fish. Microwave on High uncovered, 5 to 6 minutes or until fish flakes easily, turning dish every 2 1/2 minutes. Makes 4 servings. |
