Cheese And Rice Muffins

Ingredients:

2 Cups flour
1 Cup skim milk
1/4 Pound Shredded Cheese*
1/4 Cup oil
1/2 Cup green onions
2 large Egg whites
1 Tablespoon baking powder
1 1/2 Cups cooked brown rice
1 cup Mozza or Romano .
 

Preparation:

Preheat oven to 425 F. In medium mixing bowl combine flour, cheese, green onions, and baking powder; set aside. Using a wire whisk, in separate bowl combine milk and oil; add eggs and beat until combined. Stir into flour mixture; fold in rice (mixture will be lumpy; do not beat or overmix). Bake for 15 minutes or until a toothpick inserted in the center comes out dry. These delicious muffins are especially good with soups and stews!
