Ground Meat Mix (Low Fat)

Ingredients:

3 whole egg whites -- slightly beaten
2 cups bread crumbs
1 cup celery -- chopped
1 cup onions -- chopped
1 cup bell peppers
1 cup carrots -- shredded
1 teaspoon salt
1/2 teaspoon olive oil
3 pounds ground chicken breast -- cooked
 

Preparation:

In a mixing bowl, combine egg whites, bread crumbs, celery, onions, bell peppers, carrots, and salt. Add chicken and mix well. In a skillet, heat oil over medium heat. Add chicken mixture. Cook until chicken is no longer pink. Cool.
