Rhubarb Cobbler

Ingredients:

1/4 Cup butter or margarine
1 1/4 Cups sugar divided
1 Cup flour
1/4 teaspoon salt
1 teaspoon baking powder
1/4 Cup Milk
2 large egg whites beaten stiff
4 Cups duced rhubarb
 

Preparation:

Cream the butter and 1/2 C. sugar. Add the dry ingredients mixed together to the creamed mixture alternately with the milk. Fold in egg whites. Place the rhubarb, mixed with remaining sugar in the bottom of a 9 by 9 greased pan. Pour batter over fruit and bake at 350 degrees for about 40 mins. till lightly browned.
