Custard Pudding (Lactose Free)

Ingredients:

2 cups reduced fat soy milk
1 tablespoons honey
1 teaspoon vanilla
1 1/2 tablespoons cornstarch
 

Preparation:

In a small saucepan combine the soy milk, honey and vanilla. Place the pan over low heat and stir in the cornstarch. Heat stirring constantly, until the pudding begins to boil, about 3 to 4 minutes. Spoon the pudding into 4 custard cups and place in the refrigerator for at least 1 hour. Serve chilled.
