Curried Picnic Potato Salad

Serves: 6 to 8
Sour cream and a light taste of curry flavor turns this potato salad into a gourmet dish.
 

Ingredients:

6 cups diced cooked potatoes
2 Tablespoons chopped green onions and tops
4 large hard-cooked eggs, chopped
1 Teaspoon celery seed
1 1/2 Teaspoon salt
1/4 Teaspoon pepper
1 Teaspoon curry powder
1 cup dairy sour cream
1/2 cup mayonnaise
2 Tablespoons vinegar
6 Ounces marinated artichoke hearts, drained
 

Preparation:

Combine diced cooked potatoes, green onions, eggs, celery seed,salt and pepper. Toss lightly and chill thoroughly. Combine the curry powder, sour cream, mayonnaise, and vinegar. Pour dressing over chilled potato mixture; toss lightly to mix. Garnish with border of marinated artichokes hearts. Keep chilled. Suggestion: May add sliced olives, diced chiles, chopped celery,or your choice of additions.
