Preparation:
Cook bacon in large pot over low heat until bacon renders its fat and is limp, about 3-4 minutes. Raise heat to medium, add carrots and onion; cook for 7-8 minutes, stirring occasionally, until onion is softened. Add beef, tomatoes, broth, barbecue sauce, molasses, mustard and Worstershire sauce to pot. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 45 minutes. Add potatoes, cover and continueto simmer for 30 minutes. Uncover, simmer 15 minutes or until potatoes and meat are tender and sauce is slightly thickened, stirring occasionally. Serve bowls of stew garnished with parsley.
