Cottage Cheese Pancakes

Ingredients:

1/2 Cup pancake mix
1 Cup small curd 2% cottage cheese
1 large egg -- egg substitute or egg white
 

Preparation:

In lightly greased non-stick skillet drop heaping tablespoons of batter about 1/4 inch thick. Bake pancakes at 275 - 300 degress until lightly browned. Turn, brown other side 2 to 3 minutes. For larger serving, Place in oven for up to 2 hours before serving. Will not dry out.
