Beer Bread

Ingredients:

2 pieces yeast cakes
2 1/2 cups warm beer
1/4 cup sugar, plus 2 teaspoons
2 large eggs
1/2 cup oil
1/2 teaspoon salt
8 cups flour
 

Preparation:

Put 2 teaspoons sugar and yeast cakes in a large bowl. Pour warm beer over yeast and stir to mix. Add 1 cup flour and mix well, cover and let rise for 30 minutes. Mix 1/4 cup sugar, eggs, oil, and salt together. Add this to the yeast mixture and stir well. Stir in 6 cups flour and mix well to form a stiff dough. Form into a ball and place in oiled bowl, flip the dough over, cover, and allow to rise till double in size. Lightly grease and flour two loaf pans. Shape the dough into loaves and place in prepared pans. Let rise again till doubled in bulk. Bake at 350F for 45 minutes to 1 hour until golden brown. Remove from oven, brush top of loaves with butter. Cool on wire rack.
