Gibson's Roasting Salt

1/2 cup kosher salt
1 tablespoon dried basil
1 tablespoon coarsely ground black pepper -- (fresh!)
2 pieces bay leaves -- broken into pieces
2 1/4 teaspoons garlic powder
2 1/4 teaspoons dried thyme
1/8 teaspoon cayenne pepper
 

Preparation:

Actually, I've never made this exact recipe because I like more kick, so I increase the garlic and the cayenne (1tbl is a nice round number). Just coat the ribs liberally with the rub and pitch them on the pit for 6 hours (or thereabouts) at 250
