Grilled Shrimp - 2

Ingredients:

2 pounds fresh shrimp -- (16 - 18 to lb.)
1 tablespoon tomato paste
1 tablespoon oregano
1 teaspoon minced garlic
3 tablespoons finely chopped fresh parsley
2 tablespoons red wine vinegar
1 teaspoon salt
1 teaspoon freshly ground pepper
 

Preparation:

Shell and devein shrimp, leaving tails intact, butterfly. Combine remaining ingredients to make marinade. Marinade at room temperature for about 2 hours, stirring every half hour to coat shrimp. Prepare grill. Place shrimp on grill rack over medium coals and cook for about 5 minutes, basting shrimp with marinate. Turn shrimp and cook about 3 to 5 minutes longer until shrimp are lightly brown and flesh is firm to touch. Do not overcook. Top with remaining marinade. Serve with rice.
