Ingredients:

1 1/2 liters fish stock
400 gram fish fillet
2 medium galangal or ginger slices
1/3 cup lime juice
3 stalks lemon grass -- sliced
2 medium dry red chiles
2 medium lemon leaves -- shredded
1 teaspoon salt to taste
10 grams mint leaves -- chopped
 

Preparation:

BRING the fish stock to a boil. Add other ingredients, except mint leaves. Bring to a boil again. When the fish is done, transfer to serving bowls and garnish with mint leaves.
