Usal - Savory Bean Sprouts - W. India

Ingredients:

1/4 teaspoon cumin seeds
1/4 teaspoon ground turmeric
3 cloves garlic
1/2 teaspoon chili powder
3 tablespoons oil
1 medium onion -- finely chopped
1 pound bean sprouts
1 teaspoon salt
1 tablespoon lime juice
2 tablespoons coriander leaves -- chopped
 

Preparation:

Grind together cumin, turmeric, garlic and chili powder to find paste. Heat oil and fry onion until golden brown. Add ground paste and fry with onion for 1 minute. Add bean sprouts and salt and mix with spices and stir fry 2-3 minutes. Add lime juice. Cover and cook on low heat for another 2-3 minuts. Garnish with coriander leaves and serve hot.
