Sugar Paste Icing

Ingredients:

1 ounce gelatin
1 1/4 cups water
1 pound granulated sugar
4 ounces liquid glucose
1 ounce glycerine
1 teaspoon cream of tartar
4 ounces vegetable shortening
3 pounds powdered sugar
 

Preparation:

Dissolve gelatin in half the water in a bowl-held over hot water remove from heat and set aside combine granulated sugar, glucose, glycerine, cream of tartar, and remaining water in a saucepan, over a medium flame heat and stir to completely dissolve sugar raise flame to moderate bring to a boil, brushing sugar crystals from sides of pan heat to a temperature 230-240 degrees remove from heat immediately place into a bowl of ice water and cool for 3-4 minutes stir in shortening and dissolved gelatin mix in powdered sugar, a little at a time, until mixture forms a smooth paste cover tightly and allow to rest for 24 hours stiffen with additional powdered sugar as necessary use as desired
