Spaghetti All'amatriciana

Ingredients:

1 1/2 cups skinned chopped tomatoes
1 can canned pimento -- (diced)
1 tablespoon olive oil
14 ounces spaghetti
1 tablespoon butter
1 teaspoon salt and pepper to taste
1/2 cup diced lean bacon -- (or grated cheese prosciuto)
 

Preparation:

Heat oil and butter in pan and gently fry the bacon for 5 min until golden brown. Add tomatoes and pimento and cook over moderate heat for 10 min stirring occasionally. Cook pasta according to directions and drin well. Mix well with 1/2 the sauce. Top with the rest. Sprinkle with cheese and serve with extra cheese on the side.
