Ingredients:

1 medium russet potato -- boiled, peeled, and broken up
8 cloves garlic -- finely minced
1 teaspoon crushed red pepper flakes
1 dash saffron
1 1/2 cups extra-virgin olive oil
1 teaspoon salt -- to taste
1 teaspoon freshly-ground black pepper -- to taste
 

Preparation:

In a large mortar, place potato, garlic, pepper flakes and saffron and grind to a smooth paste. Add oil, 2 tablespoons at a time, working like a mayonnaise until all the oil is incorporated and sauce is smooth and creamy. Season with salt and pepper and serve in a crock.
