Dashi Soup Stock

Ingredients:

1 piece konbu kelp -- 2 inch piece
4 cups water
1/2 cup dried bonito flakes
 

Preparation:

In a saucepan, place the kelp and 4 cups of water. Bring to a boil and turn off the heat. Add the bonito flakes and let the soup stand for 15 minutes, then strain the stock into a bowl and discard the solids.
