Swordfish With Tomato Basil Relish

Ingredients:

4 fillets swordfish steaks -- up to 10
1 cup fresh tomatoes -- diced
1 teaspoon red wine vinegar
1 tablespoons vegetable oil
1 tablespoons fresh chopped basil
1/2 teaspoon garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
 

Preparation:

PREPARATION: 1) Cook fish on a well oiled grill 4-5 minutes each side. 2) Mix remaining ingredients. 3) Heat in a sauce pan over low or microwave until all ingredients are warmed through. 4) Do not cook tomato mixture or else it will become mushy and lose its fresh flavor. Suggested Wine: Amber Ale or White Grenache
