Cucina Rustica: Steak Pizzaiola

Ingredients:

1 pound boneless sirloin steak
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 medium Onion -- thinly sliced
3 cloves garlic -- minced
2 large tomatoes -- peel, seed, chop
2 tablespoons fresh oregano -- chopped

Preparation:

Alla pizzaiola: cooked in sauce that makes the dish taste like pizza. Between 2 sheets of waxed paper, pound steak with meat pounder to just under 1/4-inch thickness. Cut into 1/2-inch wide strips; season with pinch each of salt and pepper. In large skillet, heat oil over high heat; brown meat, in batches, for 2 minutes. Remove to plate. Reduce heat to medium and add onion and garlic; cook, stirring, for about 5 minutes or until well softened. Stir in tomatoes, oregano and remaining salt and pepper, stirring to deglaze pan. Return meat and any accumulated juices to pan; simmer for 5 minutes or until slightly thickened and meat is tender. 4 servings for $7.75CDN [Oct 94] Serve with rice or mashed potatoes and sugar peas.
