Pat's Seafood Stock

Ingredients:

2 quarts water
6 medium celery stalks -- cut into
2 medium onions -- peeled and
2 cloves garlic
1/2 medium lemon
1 package fresh shrimp heads -- and/or shells -- lobster heads, and OR shells -- fresh fish bones use ingredients singly or in combination
 

Preparation:

Combine all ingredients in large sauce pan or stockpot and bring to rapid boil. Reduce heat to low and simmer slowly 2 to 8 hours depending on strength of flavor desired. Strain before using.
