Seafood Paella

Ingredients:

1 large onion, chopped
2 cloves garlic, chopped
1/4 cup vegetables oil
1 1/2 cups rice, uncooked
1/8 teaspoon saffron
1 piece bay leaf
3 cups chicken broth, or more
1 pound shrimp, peeled/deveined
18 medium clams
18 medium mussels, washed
2 tablespoons pimentos, chopped
1 cup baby peas
 

Preparation:

1) Sauté onions and garlic in the oil and add the rice and saffron and sauté for 5 more minutes. Stir in the bay leaf and 2 cups of the broth and simmer, uncovered, for 10 minutes.. 2) Add the remaining broth and the shrimp, simmer for 5 minutes and add the clams and the mussels and any additional broth (if necessary). 4) Cook for 10 minutes or until the shells open... 5) Discard the shells and the bay leaf, adding the pimento and the peas.
