Scallops With Snow Peas

Ingredients:

3 tablespoons safflower oil
2 cloves garlic -- crushed
1/3 pound scallops -- - sliced into 1/4 inch
3 cups snow peas
1/2 teaspoon white pepper
1 tablespoon light miso
1 tablespoon arrowroot -- - dissolved in...
1/4 cup water
 

Preparation:

Stir-fry garlic in safflower oil until it begins to color; add scallops and stir-fry 1-2 minutes. Remove scallops and garlic. Add snow peas to oil and stir-fry 2-3 minutes. Add pepper, miso, and arrowroot. Stir-fry an additional 2 minutes, then return scallops and garlic to pan and heat through. Serve. Reprinted with permission from Whole Foods Market
