Grilled Fresh Tuna In Cinnamon Plum Sauce

Ingredients:

1 pound fresh tuna
10 medium fresh plums
1/2 teaspoon grated fresh ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon turmeric
1 1/2 tablespoons basalmic vinegar
7 pieces fresh sweet basil -- 6-8 leaves chopped
1/4 teaspoon black pepper -- freshly ground
 

Preparation:

Step 1 Halve the plums, remove pits, and place skin side up in a sauce pan. add 1 inch of fresh spring water Bring to boil, then simmer about 15 minutes. with fork, remove skins from plums. Continue to simmer as you remove the skins from the pot as process will take several minutes. When all skins are removed, mash plums as they simmer. Step 2 Add all the spices above and vinegar, but reserve the basil. simmer, watching closely. Once the spices are added, the sauce should gain consistency rapidly. When sauce thickens, remove from fire and set on stove to stay warm. Step 3 Grill or broil the tuna to taste. About 6 minutes per side should be sufficient for a 1-inch thick piece of tuna. If broiling, place low enough to avoid burning the outside. Step 4 Place tuna on serving dish and ladle plum sauce generously across top. Sprinkle chopped basil over the plum sauce. This is excellent served on a bed of your favorite pasta with a side dish of sliced Asian pears and Turkish figs.
