Uppu Elimachangai (Salty Lemon Pickle)

Ingredients:

6 medium lemons
12 medium green chiles
5 pieces ginger -- peeled and chopped
1 teaspoon salt -- to taste
 

Preparation:

Cut lemons into 2 cm. pieces. Chop chiles fine. Mix together lemons, ginger, chiles and salt well in a pickle jar. Allow to stand for about 3 days and then use. Refrigerate.
