Ginger Chutney (Alla Pacchadi)

Ingredients:

1 piece tamarind -- the size of a big lemon
4 medium red chiles
3 medium green chiles
2 pieces ginger -- (to 3)
1 tablespoon sugar or jaggery
1 teaspoon peeled broken black gram dal -- (urad dal)
1 teaspoon black mustard seeds
1 1/2 teaspoons oil
1 teaspoon salt -- to taste
1/2 teaspoon fenugreek seeds
 

Preparation:

1. Soak tamarind in water for 5 minutes. 2. Fry red chiles, black gram, mustard seeds and fenugreek seeds. Grind. 3. Add tamarind, green chiles, ginger, and salt/jaggery. Grind again. Add salt to taste.
