Lomi Lomi Salmon 1

Ingredients:

1 pound salmon
8 cups tomato concasse
2 cups onion
1 cup ice
1 cup scallions
 

Preparation:

soak salmon in water for 30 minutes, drain repeat for a total of 3 hours, drain well remove skin, bones, and strings shred into small pieces combine with tomato and onions in a bowl cover and chill for 1-2 hours cover with a layer of crushed ice and let stand for 60 minutes add scallions just before serving serve hot note: if using fresh salmon, layer with kosher salt for 4-48 hours remove from salt, brushing off any crystals from fish soak in several changes of cold water for 60-90 minutes, rinse well
