Grilled Salmon With Lime Mayo

Ingredients:

---LIME MAYO
1 cup mayonnaise
1 teaspoon lime juice
1 teaspoon lime zest
1 teaspoon worcestershire sauce
1/4 teaspoon salt and freshly ground pepper
4 fillets salmon steaks
1/4 cup melted butter
2 teaspoons dill
1/4 teaspoon salt and black pepper
1 bunch minced fresh parsley
 

Preparation:

Lime mayo: Combine mayo, lime juice, zest, Worcestershire, salt and pepper. Mix well. Chill until ready to use. Salmon: Preheat grill. Brush salmon with butter on each side. Sprinkle with dill on each side. Season with salt and pepper to taste. On an oiled rack about 4" from heat, grill salmon until top side is lightly browned. Turn over. Baste with butter and cook until fish flakes easily at the touch of a fork. Total time will be about 10 minutes to cook both sides! To serve: Place fish on plates, top with some mayo, fresh dill and parsley. Approximately 8-12 minutes.
