Pickled Pepper Salsa

Ingredients:

5 cups tomatoes -- seeded, peeled, finely chopped
1/2 cup pickled jalapenos including some pickling juice
1 medium Onion -- finely chopped
1 medium green onion -- finely chopped
2 teaspoons cilantro -- finely chopped
 

Preparation:

Chop each ingredient by hand, or separately in food processor. Combine all the ingredients, adding salt to taste. Allow to stand for about 1 hr to allow flavors to blend. Stir well before serving. Yield: Approx. 5 cups
