Chocolate Muffins - Baking LowCarb

Ingredients:

2/3 cup oil
1/2 cup water
1/3 cup heavy whipping cream
3 large eggs
1 Teaspoon vanilla
1 Tablespoon liquid sweetener Sweet and Low
2 Tablespoon Splenda
1 cup vanilla whey protein powder
2 Tablespoon oat flour
2 Tablespoon high gluten flour
2 Teaspoon baking powder
1/4 cup baking cocoa
2 Teaspoon orange peel
1/4 cup chopped walnuts
 

Preparation:

Combine oil, water, whipping cream, eggs, vanilla and liquid sweetener; mix. Add splenda, vanilla whey protein powder,oat flour, gluten flour, baking powder, orange peel and baking cocoa; mix till moistened. Stir in nuts. Pour into 12 greased muffin tins. Bake at 350* for 10 to 15 min. Keep an eye on the so they don't over cook
