Preparation:
After potaoes are peeled and eyed, cut into 6-8 pieces per potato, rinse and boil until fork can enter with ease. Separately, dice celery and onions. In a cup, prepare a mixture of the vinegar, water, salt and sugar, stirring well to dissolve. Drain boiling potatoes and immediately add 1/2 of the vinegar mixture, gently folding the hot potatoes around for 2 min. Add the chopped vegatables and rest of vinegar mixutre folding again for 4 min. Lastly fold in the mayonaise for 5 min. Chill 4-6 hrs. Sprinkle paprika before serving. Enjoy! |
