Vanilla Raisin Cream of Rice

Serves: 2 cups
 

Ingredients:

1 cup raw, medium grain brown rice
3 1/2 cups vanilla soy or rice milk
1/4 cup seedless raisins
2 teaspoons vanilla extract
1 tablespoon ground flaxseed
1 tablespoon flaxseed oil
 

Preparation:

Finely grind the rice to a powdery consistency in a blender, coffee grinder or nut/seed grinder. Bring water and milk to a boil and large pot. Whisk in the rice powder. Add the raisins. Cover and simmer for 15 minutes, then remove from heat. Stir in vanilla extract, flax oil and ground flaxseed. Serve immediately.
