ROASTED RED PEPPER DIP

Ingredients:

3/4 cup rehydrated red peppers
2 medium chopped green onions
1 tablespoon lemon juice -- (1 to 2)
1 cup whipped cream cheese
 

Preparation:

Drain red peppers and place under a broiler for a few minutes until peppers are slightly browned. Using the steel blade of a food processor, finely mince green onions. Add remaining ingredients and process to make a coarse puree. Chill. Prepare a selection of beautiful fresh vegetables to serve with this dip. This is a simple dip that can be ideal for the holidays. Serve this red dip with a plate of red, white and green vegetables and wow your guests. Garnish with herbs and vegetables for great eye appeal.
