Preparation:
Heat a small amount of vegetable oil in a non-stick skillet. Add chicken and sprinkle with chicken seasoning. Saute until chicken is no longer pink. In a separate skillet, saute green peppers (minimal oil). Flavor with salt and pepper (cayenne pepper if so desired). When green peppers are halfway to desired tenderness, add onions and continue until both reach desired tenderness. Add the chicken and cook on medium heat for five minutes. Add taco seasoning and mix well. Chinese hot sauce may be added. Continue cooking until taco seasoning flavor is distributed throughout. Serve chicken/vegetables on buns, topped with melted Swiss cheese and taco sauce. |
