Tuna Stuffed Baked Acorn Squash

Great served with a Salad. Recipe can easily be increased depending on the number of servings desired. 1 Squash serves 2.
 

Ingredients:

1 medium Green Acorn Squash cut in half
1 Cup Butter or Margarine
1/2 cup minced onion
1/4 cup minced celery
9 ounces Low Sodium water packed Tuna,drained
1 teaspoon salt
1/4 teaspoon pepper (if desired)
1/4 teaspoon dried thyme
1 teaspoon dried bread crumbs
1 teaspoon Paprika
 

Preparation:

Directions for 1000 Watt Microwave Oven. Cut washed squash in half lengthwise; remove seeds Spread 1 tablespoon butter or margarine over cut surfaces of squash halves; place cut side down in Microwave safe dish. Microwave on full for 6 minutes (you will have to adjust the time to accomodate a lower wattage Microwave Oven)then turn squash over and microwave another 2 minutes. Let cool to good temperature for handling and scoop cooked squash from shells. Mash squash, then combine with onion, celery, tuna, salt and pepper (if using pepper) and thyme; mix well. Pile tuna-squash mixture in shells. Sprinkle lightly with bread crumbs and 2 tablespoons melted butter; dust with paprika. Return to Microwave for 2 minutes. The original Recipe was for a regular oven, however that takes around 50 minutes cooking time in addition to the preparation time. It is just as tasty prepared in the Microwave.
